  • 2-3 cups ripe Galia or honey melon, cored and cut into bite-size cubes
  • 1–1.5 cups crumbled mild Feta (120–180g)
  • 1/4 cup finely chopped fresh mint leaves
  • 2 tbsp fresh lime juice
  • 1 tbsp mild olive oil or neutral rapeseed oil
  • 1 tsp agave nectar or maple syrup
  • Pinch of salt (optional)

Method
 

  1. Wash and core the melon, then cut into small cubes.
  2. Crumble the Feta into a large mixing bowl using your hands.
  3. Rinse and finely chop the mint leaves.
  4. In a small bowl, whisk together lime juice, oil, agave, and salt.
  5. Add melon cubes and mint to the bowl with Feta.
  6. Gently pour dressing over the salad and toss until just combined.

Notizen

Use seedless melons (Galía or cantaloupe) for child-friendly serving.
Feta can be swapped with crumbled goats’ cheese for a different flavor.
Let salad sit for 5–10 minutes before serving to enhance flavor.
