Zutaten
  

  • 1 medium ripe cantaloupe, peeled and cubed (4 cups)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Method
 

  1. Wash melon and cut into 1/2-inch cubes
  2. Crumble feta into small pieces
  3. Thinly chop mint leaves
  4. In a large bowl, whisk together olive oil, lemon juice, salt, and pepper
  5. Add melon, feta, and mint to the dressing
  6. Gently toss until well combined
  7. Chill in refrigerator for at least 10 minutes before serving

Garnish with additional mint leaves and a light scattering of black pepper before serving
For a vegan version, substitute feta with marinated tofu
