  • 2 tbsp neutral oil (rapeseed or sunflower)
  • 1.5 lbs (700g) chicken breast/drumsticks, cut into chunks
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tsp dried herbs (oregano, thyme)
  • Salt and pepper
  • 2 tbsp plain yogurt or plant-based alternative (optional finishing touch)

Method
 

  1. Preheat oven to 400°F (200°C) with a rack positioned in the upper third
  2. Pat potatoes dry and cut into 1-inch cubes
  3. Heat oil in a large skillet over medium-high heat
  4. Add potatoes in a single layer and fry 3-4 minutes per side until golden brown
  5. Transfer crispy potatoes to a baking sheet
  6. In the same skillet, add chicken and cook 5-6 minutes per side until browned and nearly cooked through
  7. In a bowl, mix garlic powder, paprika, herbs, salt, and pepper
  8. Sprinkle spice mix over chicken
  9. Transfer everything to a baking sheet and roast 15-20 minutes until chicken is fully cooked
  10. Serve potatoes and chicken as separate textures or mixed together with a drizzle of yogurt
