  • 1 medium Gouda wheel (8-10 oz), sliced
  • 2-3 goat cheese logs (6 oz total)
  • 1/2 cup unsalted raw almonds
  • 1/2 cup unsalted pumpkin seeds
  • 1 bunch dill, for garnish
  • 1 jar mixed olives (green and black)
  • 1 medium cucumber, cut into sticks
  • 1 red bell pepper, cut into sticks
  • 4-5 radishes, sliced
  • 1 large celery stalk, cut into endive shapes
  • 1 small carrot, peeled and julienned
  • 1 small bell pepper, cut into sticks
  • 2 tablespoons balsamic glaze (oil-based)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic granules
  • 1 teaspoon dill flakes
  • 10 coffee beans (for decoration)
  • 1 bag mixed greens for garnish

Method
 

  1. Preheat oven to 325°F (165°C)
  2. Toss almonds and pumpkin seeds with 1 tablespoon olive oil
  3. Roast for 8-10 minutes, stirring halfway
  4. Arrange cheeses on a large wooden board
  5. Place roasted nuts in small bowls beside the cheeses
  6. Create small piles of vegetable sticks
  7. Arrange olives in a separate bowl
  8. Mix balsamic glaze with garlic granules and 1 teaspoon dill flakes
  9. Spoon mixture into decorative ramekin
  10. Add bowl of mixed greens
  11. Finish with fresh dill sprigs and coffee beans as garnish
