  • 2 large cucumbers, peeled and sliced
  • 1 pint cherry tomatoes
  • ½ cup Kalamata olives
  • 3 cups crumbled feta cheese
  • 1 small red onion, finely diced
  • ½ cup extra virgin olive oil
  • ¼ cup fresh lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 sprigs fresh dill (optional)

Method
 

  1. Wash and dry all vegetables thoroughly
  2. Slice cucumbers and cherry tomatoes into bite-sized pieces
  3. Dice red onion
  4. In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper
  5. In a large bowl, combine cucumbers, tomatoes, red onion, and olives
  6. Pour dressing over the salad and gently toss
  7. Top with crumbled feta and fresh dill before serving
